Sesame, a flowering plant known as "Till," is one of the oldest cultivated plants globally. These tiny, flat oval seeds boast a nutty taste and an almost invisible crunch, available in colors like white, yellow, black, and red.

 

Sesame seeds enhance the texture and flavor of various foods, including rolls, crackers, and salad dressings. They are essential in bakery items, confectionery, candy making, and the production of Tahini and sesame oil, which finds uses in cooking, perfumes, pharmaceuticals, and cosmetics.

 

Historically, the Chinese used sesame seeds to make ink blocks 5000 years ago, while Ancient Egyptians ground them for flour.

ndia's diverse sesame seeds range from white to black, with oil contents between 40-50%. White and black sesame seeds are primarily consumed directly in foods. Brown seeds are mainly used for oil extraction due to their 45-50% oil content. White sesame seeds are preferred in sweets and baked goods for their desirable nutty taste, while black seeds are popular for seasoning and frying. Hulled seeds are often used in snacks.
